our unique process

Our oysters are grown by hand. This is an advantage because it gives us more control over their environment and allows us to create the most optimal conditions for their growth.

Oysters are one of the few seafoods that thrive in a farm raised environment. Farm raised oysters are grown in gear with pontoons that keep them floating at the top of the water column. This allows them to filter cleaner and more nutritious water than traditionally harvested oysters, which produces an appealing flavor profile.

As farmers, we sort, clean and desiccate the oysters on a routine basis. In addition to the natural wave action that takes place in the bay, oyster farmers also tumble their oysters to define their shape and deepen their cup which produces a desirable meat to shell ratio in each oyster.

Texas regulations require a farmed oyster to be 2.5 inches from tip to hinge before it can be harvested. Flourishing in the warm Texas water, oysters are typically on the farm less than a year. We are GO TEXAN certified, meaning we are Texas made and Texas proud!
